Leaves the cup with raised sweetness and an increase in body/brightness, a little hint of a soft fruit tone. One of the most sustainable farms in the world! A wonderful direct relationship coffee. Selva Negra Estate Coffee is grown at a high altitude in a shaded environment. This allows the bean to have a slow development cycle which instills an intense and fulfilling flavor to each bean. The coffee is not only 100% Arabica, but more importantly it is mostly Bourbon and Typica strains (which produce higher quality beans than other varieties of coffee trees). The region of Matagalpa, Nicaragua is mountainous with excellent volcanic soil producing exceptional beans. Finally, the coffee is prepared using an environmentally friendly washing process, which gives the coffee still one more unique quality enhancing aspect. Tasting Notes: A good cup from light to dark, medium to full bodied with a touch of acidity. The lighter side of a medium roast was our favorite roast point. A hint of brightness and soft fruit balancing well with a malty undertone. Take it a little darker for a good daily drinker, turns it a bit smoother and richer. Darker roasts produce a hefty malt like tone with complimenting smoky tones, still on the sweeter side, not quite as smooth but has the heft many darker roast fans will love. Roasting Notes: Medium to low chaff and even roasting, shoot for just a little development past first crack, one can go a little lighter or darker depending on personal taste. Would give it a 48 hour setup to smooth out the cup. Colombian Premium Huila Gigante – Miraflores Juanito Family – Washed The local cooperatives focus on training producers in best organic practices and invest in basic infrastructure needs like road improvements and establishing local warehouses. The regional cooperatives focus on creating credit for producers and investing in social programs on a larger and more impactful scale, using the collective resources generated from the sale of coffee. Environmental training programs, healthcare initiatives, life insurance, and educational opportunities are just some of the ways these cooperatives strive to improve the quality of life for coffee producers and their families. Tasting notes: A clean, expressive profile that evolves beautifully across roast levels. In a light roast, it presents a medium body and reveals an aromatic profile that combines delicate notes of caramel and walnut, intense floral undertones, and vibrant citrus hints of orange. Its profile is enriched with herbal characteristics and subtle spicy notes, adding complexity and an inviting aroma. Opting for a medium roast enhances its structure while maintaining the purity that defines it. Chocolate notes become more pronounced, complemented by a subtle hint of lemon, while the existing walnut notes remain distinct, even as the coffee cools, ensuring a consistent and balanced experience. This profile also brings out a vibrant acidity that perfectly balances the natural sweetness. For those who prefer a more concentrated flavor profile, a dark roast delivers a robust and bold body, where deep chocolate notes stand out, accompanied by a subtle touch of black tea. It maintains a moderate acidity and exceptional cleanliness, ensuring a refined and full-bodied experience. Roasting notes: This coffee is forgiving and delicious at any roast level. This coffee is versatile at all roast levels, highlighting different tones while still showcasing its excellent quality. Try a lighter roast for more citric floral acidity, or a darker for nuttiness and big body. Rwanda Org. Dukunde Kawa Mbilima Women Farmers – Washed A great new crop lot! Our favorite Rwanda Co-op. This season they produced a wonderful certified lot that includes only the female producers in the co-op. Shows off the high quality coffee that the ladies produce. Coming from family owned farms organized around the Musasa mill located near a gorilla habitat in the Gakenke district of Rwanda. Farm plots are so small that measurements are based on the numbers of trees, not area of land. Farmers who process their coffee at the Musasa mill are members of the Dukunde Kawa Cooperative, which started in 2000 with enough funds to build one wet mill. In the following years, the Dukunde Kawa Cooperative has built three more wet mills and completed construction of their own dry mill. More than 80 percent of the cooperative workforce is women, and producer-members have used earnings to improve their standards of living with investments in livestock, access to healthcare, and programs to protect the environment. Tasting Notes: A highly interesting coffee with a very clean profile. It stands out for its brighter and vibrant acidity, reminiscent of the complexity found in a good Kenyan coffee, accompanied by a medium body and a very chocolaty base note. Added to this is a distinct herbal touch that is much sweeter than usual, evoking delicate notes of tea like spice in the aftertaste. The evolution of flavors in the cup is fascinating: as the coffee cools, its initial acidity gently diminishes, giving way to a very clear and pleasant sweetness reminiscent of fresh apple and brown sugar. Light roasts will maximize that vibrant acidity alongside its citrus and floral notes, ideal if you are looking for a sparkling cup. Medium roasts achieve a perfect balance, harmonizing the acidity with the chocolate background and that herbal sweetness. Meanwhile, dark roasts gain much more body, highlighting baker’s chocolate, a touch of dark caramel, and almost completely subduing the acidity. Roasting Notes: Overall, it is a great coffee, very forgiving and easy to roast at almost any level. The most important detail to keep in mind is that the bean size is slightly smaller than usual, so you will need to pay a bit more attention to roast development and heat application. As is typical with many African coffees, the beans may appear a shade darker than they actually are, showing a slight sheen on the surface upon reaching a nice medium roast. If you want to soften its natural acidity or are not a fan of a very bright cup, it is preferable to lean toward a slightly darker roast.
