I want to share a bit of the story of my family and our coffee. I was born and raised among the coffee plantations in Acevedo, in the Huila region, my homeland. We, the new generation, honor that work by bringing their coffee to more countries without losing the essence that defines us: responsible practices, respect for biodiversity, and 100% hand selection; my parents still sort the coffee bean by bean to ensure a clean, sweet, and consistent cup. What sets it apart from the previous lot (the family blend)? This harvest was marked by heavy rainfall that increased the bean’s hydration and, as a result, the cup feels slightly less intense than before, while preserving the cleanliness, balance, and natural sweetness that define us. It is also extra fresh: harvested about one month ago (late July 2025) and milled (hulled) two weeks ago (early August 2025). The variety is Castillo and the washed process highlights the purity of the profile, delivering a vibrant, very clear expression in the cup. In the cup, light roasts offer a medium body with notes of caramel and walnut, an intense floral perfume, and orange-like citrus, accompanied by herbal nuances and a subtle spice. Moving to medium roast, the structure grows and chocolate takes the lead with a delicate touch of lemon; the walnut note remains crisp even as the coffee cools, and the lively acidity balances the sweetness. In dark roasts, the coffee develops a robust body with deep chocolate and a hint of black tea, maintaining moderate acidity and exceptional cleanliness. In short: a very balanced and pleasing profile, with just slightly less intensity compared to the previous lot. To preserve all this freshness, we ship by air.
